Calzone



Calzone is a close cousin of pizza, we can also call it wrapped up pizza, as its filling is same as that of pizza. Impress your family and specially kids for this handy recipe.


Ingredients
·         Pizza dough 1 (ready made)
·         Pizza sauce ½ cup
·         Chicken chunks ½ cup (cubed and boiled)
·         Onion ½ (chopped)
·         Capsicum ½ (chopped)
·         Mozzarella cheese 1 cup
·         Butter 2 tbsp (melted to glaze)

Cooking Directions
1.     Roll out pizza dough to a circle.
2.     Spread with pizza sauce, sprinkle chicken chunks, add vegetables and sprinkle cheese.
3.     Close to form a semi-circle calzone.
4.     Seal edges well with water and transfer to a baking sheet.
5.     Brush with melted butter.
6.       Bake at 200 degrees C for 20 minutes or till done.

Stuffed Chicken Fry



Luscious chicken is a fried crispy chicken. Chicken flay is stuffed with green spices. And it's coatted with crispy batter. Believe me it's fingre licking good!


Ingredients
·         Chicken ½ kg
·         Salt to taste
·         Black pepper to taste
·         Ginger garlic paste 1 tsp
·         Lemon juice 1 tsp
·         Green chilies 3
·         Fresh coriander ½ bunch
·         Mint ¼ bunch
·         Cumin seeds ¼ tsp
·         Crushed coriander ¼ tsp
·         Bread crumbs 100 gm
·         Plain flour ½ cup
·         Egg 1
·         Oil ½ liter
Cooking Directions
1.     Slice chicken breast so that a pocket forms inside it.
2.     Add salt and pepper to taste and lemon juice to chicken breasts and marinate for 10 to 12 minutes.
3.     In a blender, add fresh coriander, mint, ginger garlic paste, cumin seeds and crushed coriander.
4.     Blend these ingredients well and fill inside chicken breasts’ pockets.
5.     Then add plain flour, egg, salt and black pepper to taste and water and make a batter.
6.     Dip stuffed chicken in the batter and coat with bread crumbs.
7.     Heat oil in a wok and fry chicken breasts until color turns golden brown.
8.     Serve stuffed chicken fry with your favorite sauce.

Crunchy Honey Chicken Fingers


These irresistible golden brown snacks are double tasted with honey and corn flakes coating. Crunchy Honey Chicken Fingers is a great dish for a buffet party and other events.


Ingredients
Chicken breast 1
Warm honey ¼ cup
Water ¼ cup
Cornflakes 1 cup (crushed)

Cooking Directions
Preheat oven to 250 Degree C. Grease baking tray.
Cut chicken breast into crosswise strips almost ¾ inches.
Mix honey and water.
Dip chicken strips in honey mixture then roll into corn flakes.

Set on greased baking tray and bake for 10-15 minutes or until chicken cooked. Turn chicken after half time.

Inside-Out Cheeseburgers





Why put the cheese on top of the burger when half of it just melts off? Instead, form the burger around the cheese so you can char the meat and safeguard the more delicate flavors. Use any mixture of hard or semihard cheeses — Emmentaler and Gouda or Asiago and Parmigiano-Reggiano also pair well.

Ingredients

·         1/4 cup(s) shredded Cheddar cheese
·         1/4 cup(s) shredded Gruyère cheese
·         1 pound(s) 90%-lean ground beef
·         1 tablespoon(s) Worcestershire sauce
·         1 1/2 teaspoon(s) paprika
·         1/4 teaspoon(s) freshly ground pepper

Directions
1.    Preheat grill to medium-high or preheat the broiler.
2.    Combine Cheddar and Gruyère in a small bowl.
3.    Gently mix beef, Worcestershire, paprika and pepper in a large bowl, preferably with your hands, without overworking. Shape into 8 thin, 4-inch-wide patties. Mound 2 tablespoons of the cheese mixture on each of 4 patties, leaving a 1/2-inch border. Cover each with one of the remaining patties. Crimp and seal the edges closed.
4.    To grill: Lightly oil the grill rack. Grill the stuffed patties over medium-high heat, about 4 minutes per side for medium-well. (Be sure not to press the burgers as they cook or they'll split open and the cheese will ooze out.) To broil: Cover a broiler pan with foil and coat with cooking spray. Broil the stuffed patties in the upper third of the oven, about 4 minutes per side for medium-well. In either case, let the burgers stand for 5 minutes before serving.

Cheese Toast



Cheese toast is the name of a kind of bread sandwich. Bread is toasted and sandwiched with mortadella, pepperoni, chedder cheese, tomato and seasonings. Make this super tasty sandwiches for party, picnic or breakfast and enjoy with honey mustard mayo.

Ingredients
Mortadella 4 slices
Pepperoni 6 slices
Bread 2 slices
Tomato ½ (sliced)
Cheddar cheese 2 slices
Salt as required
Red chili as required (crushed)
Olive oil as required
Sugar a pinch
Honey mustard mayo a little

Cooking Directions
Toast two slices of bread.
In a pan heat one tsp of oil and add in the pepperoni slices.
Add in a pinch of red chili and a pinch of sugar.
Saute pepperoni slices till they sizzle and the corners turn up.
Remove from pan.
In the same pan add another tsp of oil and add in the mortadella slices.
Sear the mortadlla slices with a pinch of salt, till the edges curl.
For the bread, spread a little honey mustard mayo on each slice and on the base place a slice of cheddar cheese. Next, place the pepperoni slices on it, laying it flat.
Add a layer of thinly sliced tomatoes and then curl the mortadella slices in on the next layer.
Finish off with another layer of cheese and serve with honey mustard mayo or hot tomato chutney.

Pizza Sandwich




Meaty and cheesy sandwiches are prepared with pizza recipe's some variation. After pizza rolling to topped, It's coverd with another rolled pizza base/roti then baked and cut with knife to make sandwiches. Make platter of sandwiches by assemble pizza sandwiches with fries and dips and serve.

Ingredients
For Pizza Dough:
White flour ½ kg
Yeast 1 sachet
Sugar ½ tsp
Baking powder 2 tsp
Sugar as required
For Pizza Topping:
Chicken 1 cup (boneless, boiled)
Onion 2 (sliced)
Tomato 1 (sliced)
Capsicum 1
Mushroom ½ cup
Black olives ½ cup
Mozzarella cheese 400 gm
Pizza sauce 1 cup
Egg 2
Butter ½ cup
Cooking Directions
For Dough:
Add yeast and sugar in pre heat water, mix it and leave it for 15 minutes.
Take white flour, salt, baking powder and yeast to knead and make dough and leave it for 3–4 hours.
Now make pizza dough and place it on pizza tray.
For Topping:
Spread pizza sauce on dough, put capsicum, tomato and mushrooms on top.
Then put chicken pieces and shredded mozzarella cheese on top. Lastly top with olives.
Now brush edges from egg and roll another dough and place it on top.
Bake it on pre heated oven for 15 minutes and take it out.
Now cut it in sandwich and serve it.

Three-Cheese Pizza





Ingredients
·         1 pound(s) fresh pizza dough
·         4 ounce(s) fresh mozzarella cheese, coarsely shredded
·         1/2 cup(s) part-skim ricotta cheese
·         1/3 cup(s) freshly grated Pecorino Romano cheese
·         1/2 teaspoon(s) coarsely ground black pepper
·         1 tablespoon(s) chopped fresh parsley leaves
Directions
1.    Prepare outdoor grill for covered, direct grilling on medium-low.
2.    Cut dough into 4 equal pieces. On one end of oiled cookie sheet, with fingertips, spread and flatten 1 piece of dough to about 1/8-inch thickness. (Edge does not need to be even.) On same cookie sheet, repeat with another piece of dough. Repeat with a second oiled cookie sheet and remaining dough.
3.    Place all 4 pieces of dough, oiled side down, on hot grill grate. Cook 2 to 3 minutes or until grill marks appear on underside (dough will stiffen and puff).
4.    With tongs, turn crusts over. Working quickly, top crusts with mozzarella; then dollop with ricotta, and sprinkle with Pecorino Romano cheese and pepper. Cover grill and cook pizzas 3 to 4 minutes longer or until undersides are evenly browned and cooked through.
5.    Transfer to cutting board; sprinkle tops of pizzas with parsley. Cut into wedges. Makes 4 servings.

Pulled-Chicken Sandwiches





Ingredients
·         1 small (2 to 2 1⁄2 pounds) rotisserie chicken
·         1 cup(s) barbecue sauce
·         1/2 cup(s) water
·         1/4 cup(s) red wine vinegar
·         6 Kaiser rolls, split
·         1/2 pound(s) deli coleslaw
·         Carrot and celery sticks
Directions
1.    Remove skin and bones from chicken; coarsely shred meat.
2.    In 2-quart saucepan, combine chicken, barbecue sauce, water, and vinegar. Cook over medium heat 5 minutes or until hot, stirring frequently.
3.    Spoon chicken mixture onto bottom halves of rolls and top with coleslaw and top of roll. Serve with carrot and celery sticks.

Pastrami Burgers




Ingredients
·         2 teaspoon(s) ground coriander
·         2 teaspoon(s) paprika
·         1 1/2 teaspoon(s) ground ginger
·         1/2 teaspoon(s) sugar
·         1/4 teaspoon(s) ground red pepper (cayenne)
·         Salt and coarsely ground black pepper , to taste
·         1 1/4 pound(s) ground beef chuck
·         8 slice(s) (oval) rye bread with caraway seeds
·         Deli mustard
Directions
1.    Prepare outdoor grill for direct grilling over medium heat.
2.    In cup, combine coriander, paprika, ginger, sugar, ground red pepper, 1 teaspoon salt, and 2 teaspoons black pepper.
3.    Shape ground beef into four 1/2-inch-thick oval burgers. On waxed paper, pat spice mixture onto both sides of burgers.
4.    Place burgers on hot grill rack; cook 8 to 9 minutes for medium or until desired doneness, turning burgers over once. Burgers should reach an internal temperature of 160 degrees F.
5.    Serve burgers on rye bread with mustard.

Bhelpuri




A snack with almost iconic status in Western India, bhelpuri is low-fat, nutritious and delicious! What more can one ask for? This recipe serves two. Assemble bhelpuri just before you're going to eat it to prevent the puffed rice from getting soggy.
Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Ingredients:

3 cups puffed rice (available at Indian stores)
A handful of roasted and salted peanuts
2 potatoes boiled, peeled and chopped into tiny cubes
1 large onion chopped fine
1 large tomato chopped fine
Half a bunch of coriander chopped fine (approximately 50 gms/ 0.10 lbs)
2 green chillies chopped fine
Tamarind chutney to taste
Mint-coriander chutney to taste
A handful of coarsely crushed papdi (savoury biscuits made from flour)
1 cup sev (vermicelli-like snack made from gram flour and available at Indian stores)
Preparation:

Mix the puffed rice, peanuts, potato, onion, tomato, coriander and green chillies together in a large bowl.
Add the tamarind chutney and mint-coriander chutney according to your own taste preferences (that's the beauty of bhelpuri!), mix well, garnish with plenty of sev and papdi. Serve and eat immediately.

Crispy Burger




Ingredients
·         Chicken breast 300 gm
·         Egg 2 – 3
·         Bun 4 – 6
·         White flour ½ cup
·         Rice flour 1 cup
·         Corn flour 1 cup
·         Baking powder 1/3 tsp
·         Garlic powder 1 tsp
·         Red chili powder 1 tsp
·         Black pepper 1 tbsp
·         White pepper 1 tbsp
·         Mustard paste 2 – 3 tbsp
·         Chicken powder 2 tbsp
·         White vinegar 3 tbsp
·         Oil for fry
·         Salad leaves as required
·         Mayonnaise as required
·         Salt to taste

Cooking Directions
1.     For Chicken Preparation:
2.     Cut chicken breast into 6 slices.
3.     Now with the help of hammer tender the chicken and put it in a mixing bowl.
4.     Add white vinegar, salt, mustard paste, red chili powder and garlic powder and mix it well and marinate it for half an hour.
5.     For Dry Mixture:
6.     Now take a square box of plastic and add white flour, rice flour, corn flour, chicken powder, black pepper, white pepper, baking powder, garlic powder and salt and mix it well.
7.     For Crispy Chicken:
8.     Now put all eggs into a mixing bowl and beat it well.
9.     Now place the marinated chicken into dry batter then roll it.
10.  Now dip it egg and again.
11.  Roll it into dry batter and deep fry.
12.  (Note: roll chicken into the batter until whole chicken is coated with batter)
13.  For sauce:
14.  Take a cup and pour ½ cup of mayonnaise and mustard paste and mix it well.
15.  For Crispy Burger:
16.  Now spread sauce on one side of bun then place chicken and then as again spread sauce on chicken and put ice berg on it and place the other piece of bun.
